Angus&Oinks Smoked Corn Salsa & Salsa Roja
Try these amazing Mexican inspired salsas as a side dish to grilled meats or as an epic topping to tacos, burritos, chillies and even boiled eggs....!!
Smoked Corn Salsa -
Ingredients:
2 Smoked Corn On The Cobs
4 Tbsp Sour Crème
4 Tbsp Mayonnaise
1.5 Limes (Juice)
25g Fresh Coriander
2 Chillies
1 Tsp Angus&Oink Mexican Rub
Salt
Pepper
Directions:
1: Smoke the corn prior with cherry wood to add the desired smoked flavour.
2: Blend the corn and other ingredients until smooth.
3: Add additional chilli to your desired heat.
Salsa Roja -
Ingredients:
2 Red Peppers
2 Limes (Juice)
30g Fresh Coriander
Chilli (Preferably Scotch Bonnet Or Jalapeno)
2 Cloves Of Garlic
½ Red Onion
1 Tsp Angus&Oink Mexican Rub
2 Tsp Olive Oil
Directions:
1: Cook the peppers directly onto the grill or for a better flavour cook these directly on top of the wood embers.
2: Add all the ingredients into the blender and blend.
3: Add additional chillis according to taste.
